Saw this on a list at a wine bar and the sommelier talked me into it. It's beautiful champagne, proper structured with loads of fruit and that chalky mineral quality. But £175 for a magnum is steep and I'm not sure it's twice as good as stuff at half the price. Would I buy it again for a special dinner? Probably, yeah.

I used to just grab Moët or Veuve and call it a day but a friend introduced me to these smaller producer champagnes and Lassaigne is on another level. Le Cotet has so much going on — fruit, minerals, this kind of saline thing — and it all just flows together. Yes it's £175 but honestly after tasting this I can't go back to the big brands. The finish goes on forever.

My mate who's really into wine brought this to our dinner party and I'm still thinking about it a week later. It's got this flinty, almost salty edge to it that makes it way more interesting than your standard fizz. Genuinely long finish too — you just keep tasting it. I need to find a bottle of my own.
