Billecart-Salmon Brut Sous Bois Champagne
Champagne 12.5% ABV ABV Billecart-SalmonAbsolute stunner with cheese
We cracked this open with a cheese board on NYE and it was perfect. Orchard fruit on the nose, proper structure to it, and it just kept getting more interesting the longer it was open. My wife said it was the best champagne she's had and she's not easy to impress.
The wine shop guy knew his stuff
Went in looking for something a step up from Moët for our anniversary and the guy behind the counter pointed me to this. Really glad he did. There's a savoury depth to it that surprised me — not just fizzy fruit juice like some champagnes. The finish lingers in a really pleasant way. Will definitely buy again for the right occasion.
Birthday treat that delivered
Bought this for my 40th and wow, glad I did. Really rich and fruity but not in a sweet way — more like baked apples and something almost nutty? The bubbles are fine and it just feels properly fancy. Worth the £75 for a special occasion.
Good not great
Saw this recommended online somewhere and gave it a go. It's solid — nice acidity, clean finish, definitely more complex than your average fizz. But I've had champagnes at this price point that excited me more. Wouldn't turn it down but probably wouldn't seek it out again either.
Nice but steep for regular drinking
Had this at a friend's dinner party and it's genuinely lovely — layers of flavour that keep changing as you drink it. But at 75 quid a bottle I can't see myself picking it up regularly. For that money I'd want it to blow my mind, and it's more of a slow burner.
